These look and sound delicious... but is there a reason why we shouldn't use Panko?

The point of panko is to be as crisp as possible, but here the breadcrumbs are supposed to end up sort of squidging together a bit. No one's stopping you from using panko, let me clarify! But the results won't be "as they should."
